French Fries By The Thousands

Today we started off with 4,000 pounds of white and sweet potatoes, which we then washed, cut and blanched. After they cooled we packed them into the walk in refrigerator to await Friday morning of the Fair!  Of course, we ran a few through the fryer for test runs. It wasn’t hard to find willing taste testers. 🙂
