Our hand made tamales are prepared and ready for the Fair! We made 3300 tamales (275 dozen) with a total of 725 hours. (That was 25 people working 29 hours) There was an additional 10 hours of hauling ingredients and driving from kitchen to coolers during a 4 day period. We used 250 pounds of shredded beef and 250 pounds organic corn masa ground right here in Waco. Be sure to get yours early, they’re a popular item!
